Monday: leftover chili + leftover macaroni and cheese = chili mac!

Tuesday: Beef Stew in the crockpot (have to have something easy to get back into the normal routine!)

Wednesday: Taco Bar (or Taco Salad)

Thursday: eating out at Red Robin

Friday: Leftover Buffet aka whatever you can find in the refrigerator!

Saturday: date night, yay!

Sunday: Dollar Sunday @ church (meaning, who knows what I’ll be eating?) and either leftovers or potluck for supper

Tuesday: Roasted Winter Squash Soup with Light Oat Bread

Wednesday: Bubble Up Pizza Casserole (new recipe for us, I’ll post if we like it!)

Thursday:  Bacon Jack Chicken, Mashed Potatoes, Green Beans

Friday: Leftover Buffet

Saturday: Breakfast for Dinner (eggs, cheese grits, whatever else sounds good!)

Sunday: eating lunch @ a friend’s; eating supper @ small group for church (nice to have a day with no cooking!)

Finally back to menu planning… and I added in breakfasts for the week as well!

Breakfasts:
Monday: Pancakes
Tuesday: Crockpot Oatmeal (we can pretend it is autumn, right?)
Wednesday: Homemade Egg McMuffins
Thursday: Leftovers from oatmeal or Cheerios, berries and milk
Friday: Triple Berry Smoothies

Dinners:
Monday: Spaghetti Italian with French Bread
Tuesday: Chick Fil A before soccer practice! 🙂
Wednesday: Tender Barbecue Chicken, mashed potatoes, honey roasted carrots
Thursday: Leftover Buffet
Friday: Dinner on the road…

Menu Plan 4/25-5/1/2011 April 25, 2011

It has been a while since I’ve posted a menu plan, though I haven’t quit menu planning.  I will have to look back and see if I came across any great recipes over the past month!  This week’s plan… using up ham from Easter!

Monday: leftovers (grilled chicken, potato salad, green beans and other assorted veggies)

Tuesday: Ham and Swiss Quiche with fresh strawberries/pineapple

Wednesday: Parmesan Turkey meatloaf, mashed potatoes, green peas

Thursday:  Ham and Swiss Rolls with salad

Friday: Date night with my favorite 5 year old (while my husband is busy doing his own thing)… or at least dinner together and then he gets to go to a cool science activity and I get an hour to myself. 🙂

Saturday: Leftover Buffet

Sunday — eating at a bridal shower/luncheon at church… guess the guys are eating out while I’m there?

Menu Plan 3/14-3/20/11 March 13, 2011

So last week we ended up veering off of the menu plan… the tomato soup was NOT a hit and I never got around to making the red beans & rice, so bumping it to this week!

Monday: Louisiana Red Beans and Rice (making my own cajun seasoning) — new recipe for us!
Tuesday: Smoked Sausage, mac ‘n’ cheese and green peas… apparently this is becoming the guy’s night tradition.
Wednesday: Tacos
Thursday: Grilled Chicken, Oven Roasted Cabbage & Veggies (I’ll post the recipe if it is good!)
Friday: Salmon, Garlic Mashed Red Potatoes, Bacon Wrapped Asparagus
Saturday: Leftover Buffet
Sunday: Penne Pasta with Spinach and Bacon (which I did make last week but it is SO quick and easy and we almost always have ingredients on hand except for bacon… which I’ll have leftover from the asparagus) or Leftover Buffet

The baked beans from last week were great… and the enchilasagna casserole is a new family favorite.

Monday: Southwest Turkey Burgers with leftover Boston Baked Beans
Tuesday: Louisiana Red Beans and Rice (making my own cajun seasoning) — new recipe for us!
Wednesday: Leftover Buffet
Thursday: Penne Pasta with Spinach and Bacon
Friday: Tomato Soup with toasted cheese sandwiches
Saturday: Easy Breakfast Casserole with potatoes o’brien
Sunday: Leftover buffet or something similar to Six Can Chicken Tortilla Soup
