Oops, made this up and forgot to post it for last week! It was another week of working late around here… at least for the first part of the week. Loving crockpot meals for times like that. 🙂
The huge hit from last week was Wednesday’s meal of Chinese Lemon Chicken (crockpot) over jasmine rice with Chinese Buffet Green Beans. I didn’t love the chicken (everyone else did!) but I did love the green beans!
This week’s menu:
Monday (Valentine’s Day!): Chinese takeout — yum!
Tuesday: Tender Barbequed Chicken with mashed cauliflower/potatoes and green peas
Wednesday: Eating out, crazy night dashing from work to church
Thursday: Chicken Kabobs over brown rice
Friday: Chicken Fajitas
Saturday: Leftover Buffet
Sunday: Leftover chili from the freezer
